Shëndetlie Recipe: Albanian Honey Walnut Cake

Shëndetlie is a honey-and-walnut dessert that starts out more like a firm dough than a cake batter, gets baked until dark brown, then softens completely once hot syrup is poured over it.

This Shëndetlie recipe follows the traditional method: a kneaded dough pressed into a pan, baked from a cold oven until dark brown and firm, then soaked until the texture turns from biscuit-like to soft and moist.

It’s a close cousin of Albanian ravani, but the walnuts and syrup soak are what set it apart.

Ingredients

For the Cake

  • 3 large eggs
  • 300g (1½ cups) sugar
  • 180g (¾ cup) butter, melted and cooled

  • 700g (about 5½ cups) all-purpose flour
  • 100g (about 1 cup) walnuts, whole or ground
  • Olive oil, for greasing the pan

  • 220g (about 1 cup) sugar
  • 440ml (about 1¾ cups) water

How to Make Shëndetlie

1. Prepare the Dough

In a mixing bowl, whisk together the eggs, sugar, and cooled melted butter until well combined, then add the honey and baking soda.

Add half the flour along with the walnuts (whole or ground, as you prefer) and mix well. Add the remaining flour and knead by hand until a firm dough forms.

2. Prepare the Baking Pan

Coat a large baking tray with olive oil traditionally a round tray about 30cm (12 inches) across with sides 2–3 inches high.

Press the dough into the tray so it fills the pan, keeping it flat and an even height all over; an uneven layer bakes and soaks unevenly.

3. Bake the Shëndetlie

Place the tray on the bottom shelf of a cold oven, then turn the oven to 180°C (356°F) . The cake starts baking as the oven heats up, rather than going into an already-hot oven.

Bake for about 35 minutes, until the dough has turned dark brown and feels firm to the touch.

4. Prepare the Syrup

Remove the cake from the oven and let it cool. While it cools, add the sugar and water to a saucepan and bring to a boil. Let it boil for 10 minutes, stirring occasionally, then remove from the heat.

5. Cut and Soak the Cake

Once the cake has cooled, cut it into squares or diamond shapes and pour the hot syrup over the top. Use enough syrup to cover the cake, with roughly 1cm sitting on top before it soaks in.

6. Let It Rest

Leave the cake to cool and absorb the syrup for at least 1 hour before serving. This is what turns the firm, biscuit-like dough into a soft, moist cake.

What Does Shëndetlie Taste Like?

Shëndetlie sits somewhere between a biscuit and a cake firm on the outside from baking, but soft and moist once the syrup has soaked in.

The honey flavor is present but not overpowering, and the walnuts (more pronounced if ground rather than whole) give it a nutty, slightly earthy backbone against the sweetness of the syrup.
